Hunter Zampa is a Stamford native and the youngest “Chopped” champion. He now attends Tulane University and is sharing his recipe for “Hunter’s Famous Potato Kugel” for you to add to your Passover menu!
Hunter’s Famous Potato Kugel
Prep Time: 30 minutes
Cook Time: 1 hour 30 minutes
INGREDIENTS:
1 tablespoon of vegetable oil to grease the pan with
10 potatoes, peeled & grated
2 onions, peeled and grated
5 eggs
1/3 cup vegetable oil
2 teaspoons salt
1 teaspoon black pepper
INSTRUCTIONS:
- Preheat an oven to 350 degrees F (175 degrees C).
- Grease a 9×13 inch pan with 1 tablespoon of vegetable oil.
- Combine the potatoes and onions in a large bowl.
- Mix in the eggs, 1/3 cup of vegetable oil, salt, and pepper.
- Pour the mixture into the prepared pan.
- Bake in the preheated oven until the top is golden brown and crisp, 1 1/2 to 2 hours.
