Recipe For Kik: Tasty & Healthy For Dipping | Stamford Moms

Teff Stamford opened in July 2015 and is located at the entrance of Stamford’s West Side. Since opening, Teff Stamford has been serving quality and traditional Eritrean & Ethiopian plates at the hands of Chef Hadas Mengesha, a long time resident of Stamford with her husband, Mekonen, since immigrating from Ethiopia in the mid-1980’s.

If you’re looking for a great addition to a family meal or mid-day snack, Chef Hadas is sharing a recipe for Kik! It’s tasty, healthy and great for dipping or scooping.

INGREDIENTS:     

  • 1 Ibs -Yellow Split Peas
  • 1 Ibs – Diced Onion
  • .4 oz – Olive Oil
  • .6 oz – Salt
  • 1 tsp – Curry
  • 2 oz- Ginger
  • 25 oz -Minced garlic

INSTRUCTIONS:

  1. Boil diced onion, Kik (yellow split peas) in water for an hour or until Kik is soft.
    • Add water as needed
  2. Add minced ginger and stir for 5 minutes
  3. Add minced garlic and curry and stir for additional 5 minutes
  4. Add salt and stir
  5. Add olive oil and stir
  6. Allow time for cool down
  7. Eat with injera, rice, pita bread or Bagutte
