Recipe: Chicken Salad with Apples & Almonds | Stamford Moms

Need a new lunch idea that you can make ahead of time? “Chicken salad is our family’s favorite go-to sandwich filling, and having a big batch of this in fridge means a healthy lunch is just minutes away any day of the week. This version has a slight sweetness from granny smith apple and lots of crunch,” says recipe creator and The Local Moms Network contributor Kathleen Ashmore. Maybe the best part? It uses rotisserie chicken to save time!

INGREDIENTS:

Serves: 8 to 10

4 cups rotisserie chicken, shredded
3 scallions, sliced, white and green parts
1 cup jicama, diced (you can substitute celery)
1 granny smith apple, grated and juice squeezed out and reserved 2-3 tablespoon reserved apple juice
3⁄4 cup mayo
1⁄2 cup Greek yogurt
1 Tbsp whole grain mustard
1/4 cup fresh parsley, chopped
Kosher salt
Fresh cracked black pepper
2/3 cup toasted almonds, chopped

INSTRUCTIONS:

  1. In a large bowl, combine chicken, scallions, jicama or celery, and grated apple with one tea- spoon of salt and a few cracks of black pepper. Toss to combine.
  2. Add apple juice, mayo, yogurt, and mustard. Mix together. Taste for seasoning and add more salt if desired.
  3. Lastly, add your almonds and mix to distribute throughout.
  4. Serve on salad, scooped with crackers or tortilla chips, or in a sandwich.
