I find that the perfect weeknight dinner is fast, something that the whole family will enjoy, and incorporates some healthy ingredients. So the Chicken Sausage with Broccoli Pasta, created by Mike Geller, a Greenwich father of two young boys who owns and runs Stamford based Mike’s Organic Delivery, hits all those marks. Plus, it can be made gluten-free and uses just two pots (and one’s just for boiling water…). “This is my go-to recipe for a quick, easy, healthy weeknight meal,” says Mike. He adds, “You can substitute gluten-free pasta Edison pasta (sold at Mike’s) for a great gluten free spin. Twenty minutes and dinner is on the table!”
