Fun 4th of July Recipes from The Cozy Food Feed! | Stamford Moms

Are you on the lookout for fun and festive foods for your 4th of July celebrations this weekend? Our friend Carolyn with The Cozy Food Feed has dreamed up 5 recipes to help you with breakfast, snack, cocktail and dessert time this weekend (and all summer long)!

Create a S’mores Bar!

This no-bake option is a perfect for any gathering! Use this design or get creative by making your own. This doubles as a fun activity for the kids (with plenty of adult supervision) and it’s a crowd pleaser.

Ingredients:

– Graham crackers
– Chocolate Bars
– Marshmallows (Pro tip: use a mixture of large and small!)
– Chocolate chips
– Chocolate covered pretzels
– cookies of your choosing (I used coconut chocolate bites)
– Caramel sea salt squares
 

Then, all you need is the campfire for melting marshmallows!

Watermelon Skewers

This is another no-bake option, super fun, and perfect for kids! Let them help you assemble the skewers for everyone to enjoy.

 

Ingredients

– Fresh watermelon
– blueberries
– wooden skewers
 

Directions

Cut the watermelon into 1/2 to 3/4 inch slices. Using a star-shaped cookie cutter, cut out stars from the watermelon available.  Place approximately ten blueberries on each skewer, followed by the watermelon star.

Festive Cashew Cream Tart

This recipe is a no-bake, deliciously light recipe.

Ingredients

No Bake Crust:
 
– 1 cup rolled oats
– 2/3 cup almonds
– 3/4 cup walnuts
– 7 pitted medjool dates
– 1 tbsp melted coconut oil
 
Filling:
 
– 2 cups water
– 1 cup cashews
– 2 tbsp vanilla extract
– 5 pitted medjool dates
– 3/4 cup cool water
 
Topping: 
 
– Whipped Cream
– Blueberries
– Strawberries
 

Directions

No Bake Crust:
 

Blend 1 cup GF rolled oats, 2/3 cup almonds, 3/4 cup walnuts for 30 seconds in the food processor.  Add 7 medjool dates, 1 tbsp agave, 2 tbsp melted coconut oil and blend until sticky. Add a splash of almond milk or water if too dry.
Spread the mixture out into a tart pan; if you don’t have a tart pan, be sure to use a pan with a removable bottom.  Refrigerate for at least 20 mins!

Cashew Cream Filling:
Boil 2 cups water and pour into a glass bowl over 1 cup cashews. Cover with a towel and soak for ten minutes. Strain the water out and add the cashews to the blender.  Add two tablespoons of vanilla extract, 4-5 pitted medjool dates, and 3/4 cup water.  Add more water if the consistency is too thick. Fill the crust after removing it from the bottom-out pan.
 
Top with whipped cream of your choice and festive blueberries and strawberries!

4th of July Parfait

This is a super easy, kid-friendly “festive” idea for you to enjoy! Try it for breakfast or a light dessert.

Ingredients

– Vanilla or Plain Yogurt
– Fresh strawberries
– Fresh blueberries
 

Directions

Arrange the yogurt, blueberries and strawberries in a stack inside a clear glass or cup… it adds a festive red, white and blue twist to your 4th of July breakfast!

Watermelon Cooler Cocktail

Ingredients

– Several large pieces of watermelon, broken down to fit into a blender 
– 3 oz vodka
– 1 oz honey
– 1 lime
– fresh basil for garnish
 

Directions

1. Blend watermelon for 15 seconds until liquid. 
2. Measure out 4 oz of watermelon juice, 3 oz vodka, 1 oz honey, juice of one lime, and pour into a mixer over ice.  
3. Shake well.  
4. Pour into glasses and garnish with fresh watermelon slices and basil.  
 
*Vodka can be substituted with tequila; whatever your preference!
