Meet A Mom: Erin | Stamford Moms
Erin is the Founder & CEO of Corner Harvest. For those of you who haven’t heard about the company… it’s a game changer! Corner Harvest is a gourmet, grab & go food company that started in 2018. The menu features six core salad options. They’re all healthy, farm fresh, layered and seasonal salads. They prioritize nutrient-dense superfoods over leafy greens and use locally sourced and organic ingredients when possible. The layers of seasonal ingredients preserve all the flavors and keep salads fresh. Erin says that one of the things that makes Corner Harvest unique is the fact that lettuce is truly a small component of the salads – they focus on heartier ingredients that add more nutritional value. Dressing is included in the jar, but separately packaged so no soggy ingredients!

Harbor Harvest in Norwalk and they deliver 10 or more salads to Fairfield County offices!

We chatted with Erin about her company, what started the idea and how she juggles also being mom to a two-year-old daughter!

Where did you get the idea to start Corner Harvest?
I was living in Dubai, UAE prior to CT and fell in a love with a local salad company that specialized in layered salad jars and decided to bring the concept back to the US!

We LOVE how easy your salads are… literally just being able to grab and go is amazing! How do you come up with your recipes and combinations?
That’s great to hear! I would love to take all the credit, but we partnered with 2 professional chefs in Stamford from On The Marc catering who help develop recipes and train kitchen staff. Best decision we ever made! The salads make one less thing to worry about for lunch or dinner! I like the fact that ingredients are layered and jars are transparent, so you see exactly what you’re eating.

Corner Harvest is all about having healthy food on the go, has eating healthy always been important to you?
I’m a Family Nurse Practitioner by trade and I work hard to exercise and eat well daily. It’s a challenge, but I incorporate a lot of different activities such as running, hiking, golf, Soul Cycle and Orange Theory to make working out fun.

How do you hope this product helps shape the future of healthy eating?
I hope to have an impact on the grab & go industry. Travelling individuals, busy Moms on the go, business professionals should not have to stress about finding a gourmet, healthy, portable meal.

Which salads are your most popular? And which is your personal favorite?
Our most popular salads include our Greek salad called The Athena (of course) which includes cracked wheat, cherry tomatoes, Persian Cucumbers, chickpeas, feta and a lemon sumac vinaigrette. Our Holy Kale Caesar which consists of chickpeas with Dukkah seasoning, brussels sprouts, grilled chicken and kale. And our Corner Beet Salad with golden beets, sweet potatoes, goat cheese, pomegranates & a tangy vinaigrette.

My favorite is The Wild West! The combination of black beans, corn, baby bell peppers, grilled chicken, arugula and chipotle vinaigrette…can’t beat it!

What is it like being a small business owner? What is your advice to other ladies looking to start their own businesses?
No time like the present! The longer you wait the more time you’ll have to talk yourself out of it. There are a lot of resources to help guide you through the process. Join your local SBA or WBDC and pitch your idea to a small business mentor!

You’re mom to a two-year-old daughter, how do you juggle a new business and being a mom?
Fairly impossible, but I like to think it’s quality over quantity and I hope I’m setting an example for her. I want to teach my daughter that anything is possible if you’re willing to put in the work!

We have to ask, as a local mom, what are some of your favorite activities to do with your daughter?
Get Air Trampoline Park during the winter, MyGym toddler classes, Darien Nature Center Animal Storytime and reading classes at Harry Bennett.
